Ingredients:

4 sheets of frozen filo pastry, thawed
50g butter

For the Filling:
25g butter
1 garlic clove, finely chopped
175g leeks, finely chopped
75g Caerphilly cheese, grated
salt and freshly-ground black pepper, to taste

Method:

Begin with the filling. Melt the butter in a saucepan, add the garlic and leeks and sweat gently for 5 minutes.

Take the pan off the heat and stir in the cheese then season to taste with salt and black pepper.

Cut the filo pastry sheets so you have eight square pieces and brush each one with melted butter. Fill each one with the cheese and leek mix then brush with more butter, fold over the edges and seal closed.

Place each one on a greased baking tray and transfer to an oven pre-heated to 190°C then bake for 5 minutes, or until the pastry is golden.

Serve hot, accompanied by slices of tomatoes and a small green salad.
