Ingredients:

1 rabbit
125g streaky bacon
2 carrots, scraped and finely chopped
1 onion, finely chopped
1 turnip, peeled and finely chopped
1 tbsp olive oil

Method:

Prepare and wash the rabbit. Combine the vegetables in a bowl and use to stuff the rabbit. Cover the rabbit with the bacon, ensuring that the stuffing is sealed in the body cavity.

Rub with the olive oil, then scatter any remaining vegetables in the base of a roasting dish. Set the rabbit on top and cover with foil.

Transfer to an oven pre-heated to 180°C and roast for 1 hour (remove the foil for the final 10 minutes to brown the meat). Serve accompanied by mashed potatoes and gravy.
