Ingredients:
300ml milk
2 eggs
30g butter, melted and cooled
225g plain flour
pinch of salt
drop of vinegar
75g sugar
Method:
Combine the salt, sugar and flour in a bowl. Beat the eggs in a separate bowl then add the butter and milk and beat to combine. Mix thoroughly before adding a drop of vinegar. Now add the egg mixture to the flour mixture, a little at a time, mixing thoroughly after each addition. Beat everything together to a smooth batter then grease a pan over high heat with a little butter.
Add about half a cup of the pancake mix and roll the pan to make a thin pancake. Fry for about 2 minutes per side, or until well browned. Transfer to an oven to keep warm as you finish frying the remainder of the pancakes.
