English Translation

This is a recipe for a herbed pancake that is typically spread with butter and eaten hot with bacon and eggs for supper.

Ingredients:

220g plain flour
1 tbsp fresh parsley, finely chopped
1 tbsp shallots, finely chopped
2 eggs
a little milk
salt and freshly-ground black pepper
butter, to fry

Method:

Combine the flour, eggs, parsley and shallots in a bowl. Beat well to mix thoroughly the n add enough milk to form a batter the same consistency as double cream. Add salt and black pepper, to taste, and beat in.

Heat a frying pan and add a little butter. Beat the batter well then pour a little into the pan. Cook in exactly the same way as you would a pancake, flipping it over when cooked golden brown on the base. Transfer to an oven to keep warm then cook the remaining batter. When done spread the pancakes with butter and serve with bacon and eggs.

Note that the 'glas' part of the pancake's name means that it really should be coloured green. You need to add enough herbs to colour the pancake and not just add a 'pinch of Italian herbs' as I've seen in some recipes!
