Ingredients:

For the Batter:
300ml milk
160g plain flour
1 large egg

For the Cockles:
450g cockles
2 tbsp mayonnaise
3 tsp lemon juice
2 tsp finely-grated lemon zest
2 tsp fresh parsley, finely chopped

Method:

Begin with the batter. Beat together the milk and the egg before adding the flour and beating the mixture until smooth. Set aside to rest for 30 minutes before use.

When the batter has rested mix in the cockles and blend thoroughly then set aside. In the meantime, blend the mayonnaise with the lemon juice, lemon zest and parsley. Place in the refrigerator until it's time to serve.

Place oil in a large pan or a deep fat fryer and when hot add the cockle batter by the tablespoon. Fry until the batter is golden and cooked through. Remove with a slotted spoon and set aside to drain.

When the cockle batter has been cooked, arrange them on a plate and serve with the lemon mayonnaise.
