Cawl Blawd Ceirch (Welsh Oatmeal Soup)

Cawl Blawd Ceirch (Welsh Oatmeal Soup) is a classic Cymric (Welsh) for a traditional soup of fried oatmeal, leeks, onion and carrots in a milk and white stock base that makes an excellent soup starter for St David's day. Cynhwysion:

1 nionyn mawr, heb ei groen ac wedi torri'n fân
2 genhinen wedi golch a thorri'n ddarnau mân
2 foronen, wedi crafu a thori'n ddarnau mân
2 lwy fwrdd o fenyn
50g o flawd ceirch conolig
600ml o stoc gwyn neu stock llysiau
450ml o lefrith
halen a phupur du at flas
1/2 llwy de o deim wedi torri'n fân (mae teim lemwn yn dda)
6 llwy fwrd of bersli wedi torri'n fân

Dull:

Cyfunwch y nionyn, cennin a'r moron mewn sosban fawr gyda'r menyn. Cynheswch y cyfan nes i'r menyd doddi yna trowch y llysiau nes eu bod wedi gorchuddio yn y menyn. Ychwanedgwch y blawd ceirch a ffriwch, gan droi'r gymysgfa'n gyson, am 3 munud. Now ychwanegwch y stoc can droi'r gymysgfa yn drwyadl cyn dod a'r cyfan i fudferwi. Rhoddwch gaead am y sosban a choginiwch yn ysgafn am 45 cyn ychwanegu halen a phupur at flas ac yna ychwanegu'r teim a'r persli. Pan y n barod i weini, tynwch y sosban oddi ar y gwres ac ychwanegwch y llefrith. Rhoddwch y cyfan yn ol ar y gwres dewch a'r gymysgfa i fudferwi. Gweinwch yn unionsyth.

English Translation


Ingredients:

1 large onion, peeled and chopped
2 leeks, washed and chopped
2 carrots, scraped and chopped
2 tbsp butter
50g medium oatmeal
600ml white stock or vegetable stock
450ml milk
salt and freshly-ground black pepper, to taste
1/2 tsp fresh thyme, chopped (lemon thyme is good)
6 tbsp fresh parsley, chopped

Method:

Combine the onion, leeks and carrots in a pan with the butter. Heat until the butter has melted then toss the vegetables to coat evenly. Add the oatmeal and continue frying, stirring constantly, for 3 minutes.

Now stir in the stock then bring the mixture to a simmer. Cover the pan and cook gently for 45 minutes before adjusting the seasonings to taste and adding the thyme and parsley.

When ready to serve, take off the heat then stir in the milk. Return to the heat, bring back to a simmer and serve immediately.
