Dominica Curry Prawns

Ingredients:

1kg king prawns (do not peel)
1 large onion, diced
5 garlic cloves, minced
2 spring onions, sliced into thin rounds
5g flat-leaf parsley, finely chopped
250ml coconut milk
125ml water
3 tbsp colombo curry powder
1 tbsp ground black pepper
salt, to taste
120ml olive oil, divided
1 tbsp paprika
½ red bell pepper, diced
½ yellow bell pepper, diced
1 christophene squash, peeled and cubed
4 okra pods, sliced into thin rounds
1 red habanero chilli, minced

Method:

Wash the prawns well under cold, running water then set aside to drain.

Place a wok or deep frying pan over medium heat. Add in half the oil then scatter over the curry powder, paprika and black pepper and stir fry for 30 seconds. Add in the onion, garlic, spring onions, parsley and chilli. Stir-fry for a few minutes until the onion is soft then add in prawns and stir to coat in the seasonings.

Pour in the coconut milk and bring everything to a simmer.

Place another pan over medium heat. Add the remaining oil and use to fry the christophene, bell peppers and okra until al dente (about 8 minutes).

Add the fried vegetables to the prawn and coconut milk mixture. Pour in the water and season to taste with salt. Return to a simmer and cook for about 10 minutes, or until the gravy has thickened to your liking.

Stir through the flat-leaf parsley and serve with your favourite accompaniments.
