Teisen Hufen (Cream Pie)

English Translation


Ingredients:

180g plain flour
1 tsp baking powder
80g sugar
1 tsp butter
2 eggs, separated
75g sugar
500ml cream
60g sultanas

Method:

Mix the flour, baking powder, sugar and the butter together until the mixture resembles breadcrumbs then add the egg yolks and mix in. Add just enough cold water to the mixture to bring it together as a pliable dough. Roll this out on a floured surface until it's large enough to cover the base and sides of a deep pie dish.

Meanwhile, place the egg whites in a clean bowl and beat until it forms soft peaks. Add the sugar and beat into the egg whites then add the cream and beat into the mixture.

Scatter the sultanas over the pastry base then fill the pie with the cream mixture. Place the pie in an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for about 30 to 40 minutes, until set and browned.
