75g of Caerphilly or Cheddar cheese
1 small leek
30g butter
generous pinch of mustard powder
20g chopped parsley
2 tbsp plain flour
¼ tsp black pepper

Method:

Finely-chop the leek and fry in butter until softened. Once the cooked leek has cooled add it to the breadcrumbs and grated cheese. Mix in the chopped parsley, salt and pepper before adding the egg yolk as a binding agent.

Mix all the ingredients together then shape the mixture into sausages. Roll in flour and fry gently on each side until the sausages are golden-brown and crisp.
