Pwdin Reis Mam (Mum's Rice Pudding) is a classic Cymric (Welsh) version of a rice pudding, actually based on my mother's recipe that incorporates sultanas into the mix. The full recipe is presented here and I hope you enjoy this classic Welsh version of Mum's Rice Pudding.

40g siwgwr
25g menyn
60g swltanas

Dull:
Cymysgwch y reis, siwgwr a swltanas mewn crochenwaith cyn tywallt y llefrith am ben y cyfan a chymysgu. Gratiwch y nytmeg am ben y llefrith cyn ychwanegu dafnau o'r menyn am ben y cyfan.
Rhowch y ddesgil yng nghanol popty wedi ei cyn-gynhesu i 150°C (300°F/Gas Mark 2) a phobwch am 30 munud. Dylid cymysgu'r cyfan cyn pobi am 30 munud arall a chymysgu unwaith eto. Dychwelwch y ddesgil i'r popty a phobi am awr yn ychwaneg.

English Translation
This is the recipe for my mother's perfect rice pudding.
Mix together the rice, sugar and sultanas in an ovenproof dish then pour the milk over the top and stir. Grate the nutmeg over the surface of the dish and dot the butter on top.
Place the dish in the centre of an oven pre-heated to 150°C (300°F/Gas Mark 2) and bake for 30 minutes. Stir the pudding at this point then return to the oven for a further 30 minutes before stirring once more.
Return the dish to the oven and cook for a further hour. Serve in pudding bowls with a dollop of damson jam.
