Coconut drops are a sweet, chewy treat that’s popular in Saint Kitts and Nevis. They’re made with fresh coconut and sugar.

Ingredients:

150g grated coconut
200g sugar
125ml water
1 tsp vanilla extract

Method:

Combine the sugar and water in a saucepan. Bring to a boil and cook until the resultant syrup caramelises.

Stir in the coconut and vanilla, and cook until the mixture is thick.

At this point take off the heat, then drop spoonfuls of the mixture onto parchment paper or greaseproof (waxed) paper and allow to cool.

Allow to cool completely and harden before storing or serving.
