Zviyo (Millet Porridge)

Millet is the staple grain of Zimbabwe and it's pearl millet that's most commonly grown. This, along with sorghum are the two commonest types. As a result millet and ground millet are used in many recipes where maize flour or gari would be used elsewhere in Africa.

In essence, Millet Porridge is the Zimbabwean equivalent of West African FuFu and it's traditionally served with Nyama a meat-based stew.

Ingredients:

460g ground millet (pearl millet or sorghum)
1l water

Method:

Bring 700ml of water to the boil in a large pot then combine 300g of the ground millet with the remaining water. Add the millet flour mixture to the boiling water, stirring continually with a wooden spoon.

Reduce the heat slightly and cook for 5 minutes as you slowly add the remaining ground millet. When the mixture becomes very thick and begins to pull away from the sides of the pan transfer to a serving pan and use a wooden spoon to compress it into a ball shape.

Serve with a meat-based stew such as Nyma ye Huju
