Zuppa di Cipolle al Pecorino (Italian Onion and Pecorino Soup) is a traditional Italian recipe for a classic soup of onions in a meat stock finished with pecorino cheese and toasted bread. It's not just the French who make a classic onion soup. Here is the traditional Italian version; just as good in my opinion (though the best flavour is dependent on the stock you use).
Ingredients:
4 tbsp butter
1.5kg onions (mix of yellow and red), halved and thinly sliced
1 tsp fresh marjoram, minced
1 tsp fine sea salt
80ml (1/4 cup) dry Marsala wine
1 tbsp tomato purée
1l (4 cups)
Brodo di Carne or best-quality home-made or commercial chicken, meat or vegetable stock
8 crostini (toasted baguette slices)
Freshly-pared pecorino Romano to garnish
Method:
In a cast iron casserole (Dutch oven) or large heavy-based saucepan melt the butter over medium heat. When the butter is foaming add the onions and stir to coat in the oil. Sprinkle over the marjoram and salt, reduce the heat to low and allow the onions to sweat down slowly, uncovered, for 60 to 90 minutes, until they are golden and velvety soft.
Increase the heat to medium-high and pour in the Marsala wine. Continue cooking, stirring for 2 minutes to allow some of the wine to evaporate.
In a small bowl, stir together the tomato purée and 60ml (1/4 cup) of the stock. Stir the diluted tomato purée into the soup. Pour in the remainder of the stock then reduce the heat to low once more and simmer, partially covered, for 45 minutes.
Taste and adjust the salt levels, if needed. Divide the soup between 4 bowls and top each with two crostini and a tablespoon or two of the cheese slivers. If desired, you can lightly toast the cheese by putting the soup under a hot grill (broiler).
