Zùlt (Pickled Pigs' Ears)

Zùlt (Pickled Pigs' Ears) is a traditional Aruban recipe for a classic dish of boiled pigs' ears pickled in vinegar with onions, allspice, cloves and chilli and which are typically served on bread as a snack. Ingredients:

225g pigs' ears
120ml white malt vinegar
2 garlic cloves, crushed
1/2 tsp ground allspice
6 cloves
1 onion, finely sliced
2 hot chilli peppers, finely chopped (or to taste)

Method:

Thoroughly scrub the pigs' ears until they turn white. Place in a large pan and cover with salted water. Bring to a brisk boil and cook for about 20 minutes, or until tender. Take off the heat and drain (retain 120ml of the cooking liquid). Allow the ears to cool until they can be handled then slice into fine julienne strips.

Add the reserved cooking liquid to a bowl and whisk-in all the remaining ingredients (except the ears). Whisk to combine then pour over the sliced pigs' ears. Cover and refrigerate for 24 hours before serving with slices of French bread.
