Zitumbuwa (Banana Fritters) is a traditional Malawian recipe for a classic dessert of banana and maize flour fritters typically served with syrup as a dessert, though they can also be served as a snack. Ingredients:
3 ripe bananas
70g ufa (white maize flour)
1 tsp sugar
pinch of salt
oil for frying
Method:
Peel the bananas, add to a bowl then mash thoroughly with a fork. Add the salt and sugar and mix in before blending the maize flour in to form a batter.
Add oil to a frying pan or wok and when almost smoking use to fry spoonfuls of the banana batter until browned and crisp. Drain on kitchen paper then serve.
