Zitumbuwa (Banana Fritters)

Ingredients:

3 ripe bananas
1 tsp sugar
100g ufa (cornmeal)
generous pinch of salt
oil for frying

Method:

Mash the bananas and mix thoroughly with the salt, sugar and cornmeal. Heat the oil to a depth of about 3cm in a wok until very hot. Add teaspoonfuls of the banana mixture to the oil and fry until golden brown.

Drain on kitchen paper and serve hot as a snack.
