This dried prawn curry is also known as zavla curry and is made with bottle masala. Typically it's served with the rice flatbread, apas and foogath.
Ingredients:
150g Zavla (dried prawns) soaked in water for 10 minutes
2 tbsp Cooking oil
4 long Spring onions or shallots
6 large garlic cloves finely minced
3 inch Fresh ginger, grated
4 large Green chilies, finely chopped
3g Coriander, stalks only, chopped finely
2 tbsp Bottle masala
4 pieces soaked in water for few minutes
¼ tsp Coriander leaves, chopped, for garnish
Method:
Once the dried prawns have soaked drain them and set aside until ready to use.
Place a pan over medium heat and once hot add the oil and fry the onions, ginger, garlic, coriander stalks and green chillies for about 6 minutes, or until the onions are translucent.
Scatter over the bottle masala then add the kokum pieces along with their soaking liquid. Stir fry for 1 minute then add the soaked prawns and 250ml water.
Bring to a boil then reduce the heat to medium-low and simmer for 10 minutes or until the prawns are cooked.
Add the freshly chopped coriander leaves. Taste and adjust seasoning then turn into a warmed dish and serve.
