Zabaglione is a traditional Italian recipe for a classic dessert of a wine, egg yolk and sugar mousse served in glasses and accompanied by Amaretti biscuits. The full recipe is presented here and I hope you enjoy this classic Italian version of: Zabaglione.
Combine the wine, egg yolks and sugar in a heat-proof bowl. Bring a pan of water to a simmer, sit the bowl on top and whisk constantly until the mixture begins to thicken.
Continue whisking until the zabaglione mixture begins to leave the side of the bowl then take off the heat an sit in a bowl of iced water (this will prevent the mixture from splitting). Continue whisking until cold then spoon into wine glasses. Garnish with Amaretti biscuits and serve.
