Yorkshire Parkin
Yorkshire Parkin is a traditional English recipe (from Yorkshire) for a classic moist cake of butter, flour and oatmeal flavoured with black treacle, golden caster sugar and ginger that was traditionally served on Guy Fawkes night with cheese. When thinking of parkin, most people associate this sticky ginger-flavoured cake with Scotland. What's less known is that Parkin is also a traditional Yorkshire cake and it's this variant I present here. It was traditionally eaten round the bonfire on Guy Fawkes Night, the 5th of November, sometimes served with a thin sliver of cheese or a layer of jam.
Ingredients:
240g self-raising flour
120g butter
240g oatmeal
1 tsp ground
ginger
250ml treacle (molasses)
120g golden caster sugar
1 egg
150ml milk
pinch of salt
Method:
Sift the flour into a bowl, dice the butter then add to the bowl and rub into the flour until the mixture resembles coarse crumbs. Add the oatmeal, ginger and sugar and beat in the egg. Spoon the treacle into a pan and add the milk and sugar. Heat gently until the treacle is liquid then take off the heat and stir into the oatmeal mix.
Stir to combine thoroughly then turn the mixture into a greased and lined shallow tin. Transfer to an oven pre-heated to 150°C and bake for about 2 hours, or until golden brown and a skewer inserted into the centre emerges cleanly.
Allow to cool int the tin for 10 minutes then turn out onto a wire rack to cool completely. When cold, cut into squares and serve.
