Kebab with Garlic is a traditional Western Saharan recipe for a classic dish of minced meat combined with garlic, sambal olek and milk that's shaped on skewers, barbecued and served with a garlic and chive sauce. Ingredients:
400g minced meat (typically camel or goat, but you could substitute beef)
2 garlic cloves, minced
1 tsp salt
1/2 tsp sambal olek
1 tsp ground cumin
100ml milk (traditionally camel or goat)
250ml garlic and chives sauce
Method:
Combine the meat, garlic, salt, sambal olek, cumin and milk in a bowl. Mix with your hands until smooth and thoroughly blended then shape the mixture around eight skewers. Place on a hot barbecue or under a grill (broiler) and cook for around 8 minutes, or until done through. They can also be cooked on a barbecue or over an open fire.
Serve hot with lemon wedges and couscous. Accompany with a garlic sauce.
