Wood avens (also known as herb bennet) has roots with a lovely clove-tinged flavour that maintain the flavour when dry. It's not as intense as cloves, but is, I think, better suited if you want a subtle clove background to a dish. Making this spice is simplicity itself, pick the roots, was well, dry in an oven then grind (a mortar is best but you can use a spice grinder), sift out any fibres then store in a jar.
Ingredients:
200-300g wood avens roots, washed and dried
Method:
Pre-heat your oven to 100°C. Turn the oven off and allow to cool for 10 minutes. Arrange the washed wood avens roots on a baking tray then place in your oven. Allow to dry as the oven cools over night.
Repeat this for three nights until the roots are completely dry. Chop coarsely then render to a powder either in a mortar or using a spice grinder. Pass through a fine sieve and discard any fibres.
Transfer the root powder to jars and keep in a cool, dark, place.
