These are classic Chinese springtime pancakes, made and flavoured with early wisteria flowers.

Ingredients:

1/2 cup Wisteria Flower
2 tbsp plain Flour
1 Egg
1/4 tsp Salt
a little Chicken Essence

Method:

Place the wisteria flowers in a bowl, cover with water, swirl to wash then drain in a colander.

Beat together the egg and flour in a bowl. Mix in the wisteria flowers then season with the salt and chicken essence.

Stir everything together into a batter.

Place a small frying pan over medium heat. Once hot add 2 tbsp oil. Pour in the batter, then spread it evenly to cover the base of the pan. Cook until small bubbles appear on the upper surface then flip over and cook until golden on the other side.

Slice the pancake onto a plate, halve and serve.
