Wisteria Flower Porridge

This is a classic springtime dish from Northeast Asia, where snow japonica rice (glutinous rice) and wisteria flowers are both springtime treats.

Ingredients:

100g short-grain glutinous white Rice
30g Glutinous Rice
50g Wisteria Flower
a little lump sugar

Method:

Place the glutinous rice in a bowl, cover with water, swirl with your fingers then pour off the water. Re-cover the rice then set aside to soak for 30 minutes.

Pluck the wisteria flowers from the stems (the stems are toxic and must be discarded). Soak the flowers in water for 10 minutes then drain in a colander.

Place a saucepan over medium-high heat. pour in 500ml water and add a little salt. Bring to a boil then take off the heat. Add the flowers and blanch for 1 minute then drain in a colander.

Bring a pan of 500ml water to a boil. Add the rice, return to a simmer and cook for 25 minutes until the rice is tender.

Cook for about 5-10 minutes more until the liquid level has reduced and the rice mixture is getting thick.

Add the wisteria flowers and sugar, return to a boil and cook for 5 minutes or until thick and of a porridge-like consistency.

Divide between two bowls, garnish with a few fresh flowers and serve.
