Wisteria Cordial

In essence, this is a wisteria flower syrup, but as you can dilute it with water and drink the result it's defined as a cordial.
Note that as ever with wisteria you want the flowers ONLY. Strip the the flowers from the stems by running your fingers down them. Don’t worry if the stalks stay attached, but do
ensure there are no seeds or other green parts included. All parts of wisteria are poisonous, bar the flowers. Keep the flowers and discard the stems.
Ingredients:
200ml water
200g white granulated sugar or caster sugar
50g wisteria flowers (75g when picked with stems)
Method:
Combine the sugar and water in a saucepan. Place over low heat and cook, stirring, until the sugar dissolves. Bring to a gentle simmer, then add the wisteria flowers.
Stir to combine, return to a simmer then allow to simmer very gently for fifteen minutes. Now secure the lid on the pan and turn the heat off. Set aside for half an hour to steep.
At the end of this time, strain the syrup through a fine-meshed sieve, pressing down on the petals with the back of a spoon to extract as much syrup (and flavour) as possible.
Pour into two small sterilised bottles and cap. Allow to cool, then keep in the fridge. It will last for ages.
You can use as a syrup for ice cream, pancakes and waffles or dilute 1:4 with chilled still or sparkling water to prepare a drink.
