This is a version of traditional ginger beer that uses wisteria flowers instead of the ginger. Sparkling and delicious.
The recipe relies on the natural yeasts living on the wisteria flowers for the fermentation.
Ingredients:
8-10 cups wisteria flowers
600g golden caster sugar
juice of 2 lemons
2 lemons, sliced
5l water
Method:
Pour the sugar, water and lemon juice into a large jar or demijohn. Stir or shake well to dissolve the sugar. Add the wisteria flowers, making sure they're submerged under the liquid. Note that the flowers will raise to the surface, but will sink as fermentation progresses.
Cover with a double layer of muslin and secure with a rubber band. Stir vigorously every day for 3–4 days. At the end of this time, strain the liquid through a sieve lined with a double layer of muslin.
Bottle in flip-top bottles and secure the lids. Leave at room temperature for 1-2 days, check the fizz and store in the fridge after it's reached your desired level of fizziness.
The drink will last for weeks in the refrigerator, but it's guaranteed to be drunk before this time is ever up.
