Ingredients:

900g wild mustard greens (or collard greens)
1 tsp freshly-ground black pepper
1 tsp Sugar
900g Green cabbage
1 tsp thyme
3 Smoked Ham hocks (about 1kg)
4 medium potatoes, peeled and quartered
3l Water
1 tbsp salt

Method:

Wash the greens and remove the leaves, discarding any stems. Coarsely chop the greens then quarter the cabbage and remove the core before coarsely-chopping the cabbage. Add the ham hocks to a large (about 4l pan) and cover with water. Bring to a boil, reduce to a simmer, cover the pot and allow to cook for about 90 minutes.

Add the greens, salt, pepper, sugar and thyme and cook for 30 minutes before adding the cabbage and potatoes. Cook until all the vegetables are tender (about 30 minutes). Adjust the seasonings to taste and serve immediately.
