Wild Mushroom Soup

Ingredients:

500g mixed wild mushrooms
75g aniseed toadstools
90g butter
2 medium onions, chopped
1 garlic clove, crushed
2 tbsp plain flour
1l hot chicken stock
1 bayleaf
120ml cream
salt and freshly-ground black pepper

Method:

Clean the mushrooms (including the anise toadstool) with a damp cloth and roughly chop the caps and stems. Heat the butter in a pan and add the garlic and onion. Cook until the onion becomes soft and translucent then add the mushrooms and cook over high heat for 3 minutes, stirring constantly. Sprinkle the flour over the top and mix well to combine. Add the hot chicken stock and bring to the boil.

Add the bayleaf and simmer for 10 minutes. Remove the bayleaf, allow to cool a little then use a hand blender to blend until smooth. Return to the heat, season with salt and pepper and reheat until boiling. Stir-in the cream and serve.
