Ingredients:

175g burdock root flour
85g curly dock seed flour
85g rice flour
1/2 tsp sea salt
1/2 tsp baking soda
70ml grape seed oil
1 tbsp vanilla extract
120ml runny honey
150g dark chocolate chips (at least 75% cocoa solids)

Method:

Combine the burdock flour, sea salt and baking powder in a large bowl. In a smaller bowl whisk together the oil, vanilla extract and honey. Add the wet ingredients to the dry ingredients along with the chocolate chips then bring together as a dough.

Pinch off small pieces of the dough and shape into 12mm diameter balls. Press these lightly onto a baking tray lined with parchment paper then transfer to an oven pre-heated to 175&x00B0;C and bake for about 8 minutes, or until golden brown.

Remove from the oven, allow to cool on the tray for 5 minutes then transfer to a wire rack to cool completely before serving.
