White Soda Bread: An Irish recipe for a stew of rabbit and button onions cooked in a red wine, olive oil and tomato sauce flavoured with spices.
Ingredients:
500g soda bread flour
1 tsp bicarbonate of soda (baking soda)
1 tsp salt
25–50g caster sugar
400–475ml buttermilk
25g butter
Method:
Sift the flour, bicarbonate of soda and salt into a large bowl, add sugar and mix well. Pour in 400ml of the buttermilk, mixing lightly with a wooden spoon until the dough is springy, adding more buttermilk if you need it.
Grease a 20 x 10cm loaf tin and spoon the dough into the tin. Sprinkle a little flour over the top and bake in an oven pre-heated to 180°C (350°F/Gas Mark 4) for half an hour. Turn the heat down to 150°C (300°F/Gas Mark 2) and bake for another half hour until the loaf is nice and crusty on top.
Take the loaf out of the oven and leave in the tin for 5 minutes. Turn out of tin and cool on a wire rack.
