This is a traditional Scottish method of making scones, using wheaten flour as part of the essential mixture.

Ingredients:

1/2 tsp bicarbonate of soda
115g plain flour
115g wheaten flour
1 tsp cream of tartar
3/4 tsp salt
15g butter
a little milk to combine
1 tbsp caster sugar

Method:

Sift the plain flour into a bowl then mix in all the remaining dry ingredients. Cube the butter and rub into the flour mixture until completely combined. Add just enough milk to bring the mixture together as a soft dough.

Turn this out onto a lightly-floured surface and knead until smooth then roll out to about 2cm thick. Use a pastry cutter to cut out into 5cm rounds. Take the scraps and form back into a dough and as many more scones from these as possible.

Place the scone rounds on a lightly-greased baking tray and place in an oven pre-heated to 200°C. Bake for about 12 minutes, or until well risen and very lightly browned. Remove to a wire rack and allow to cool completely before serving.
