My father absolutely loves watercress and I was very intrigued when I was shown this recipe for cooked watercress greens. I've adapted it a little from the version I was shown and present it here for the first time. This is best made with older wild watercress (which should always be picked from fast-flowing streams away from grazing animals) but shop-bought watercress works just as well.

Ingredients:

300g wild watercress (stems and leaves)
1/2 red onion, finely chopped
1 garlic clove, very finely chopped
60g butter, melted
3 tbsp orange juice
1 tbsp finely-grated orange zest
2 tbsp lemon juice
sea salt, to taste

Method:

Melt the butter in a non-stick pan and use to gently fry the onion and garlic until soft (about 6 minutes). Roughly chop the watercress, add to the pan and stir until just wilted.

Add the orange juice, lemon juice and orange zest and cook gently until the liquid has almost disappeared. Season to taste with sea salt and serve.
