Warm Potato and Mushroom Salad: An Irish recipe for a classic salad of baked potatoes and mushrooms in a light garlic dressing garnished with herbs.

Ingredients:

500g potatoes
375g mixed mushrooms, sliced
olive oil for greasing
leaves from 1 bunch of parsley (or basil)
4 garlic cloves, crushed
flat-leaf parsley and basil leaves, to garnish
salt and freshly-ground black pepper, to taste

Method:

Thinly slice the mushrooms and potatoes. Generously grease an ovenproof dish that is large enough to hold the potatoes and mushrooms in a layer no more than 4cm deep.

In a large bowl, toss together the mushrooms, potatoes, garlic and parsley (or basil). Season to taste with salt and black pepper then turn the mixture into the baking dish. Spread the mixture in an even layer then transfer to an oven pre-heated to 180°C (Gas Mark 4) and bake for about 45 minutes, or until the potatoes are tender. About half way through the cooking time turn the potatoes over.

When cooked, allow to stand for a few minutes then turn into a warmed serving dish. Garnish with the flat-leaf parsley and basil and serve immediately.
