Ingredients:
1 egg, separated
60g sugar
60g butter
1 roll white bread, crumbed
60g mixed nuts
60g dark chocolate, melted
Method:
In a bowl cream together the butter and sugar until pale and creamy then add the egg yolk and whisk in until thoroughly combined. Stir in the melted chocolate and the breadcrumbs then whip the egg white in a clean and dry bowl until it stands in stiff peaks and fold into the chocolate mix along with the nuts. Fold to combine thoroughly then pour the mixture into a cake tin lined with greaseproof paper.
Place in an oven pre-heated to 180°C and bake for about 25 minutes, or until the top of the pie is firm to the touch. Allow to cool in the tin for a few minutes then turn out and serve warm with a vanilla sauce and fresh fruit.
