Varškės Spurgos (Lithuanian Curd Doughnuts)

Varškės Spurgos (Lithuanian Curd Doughnuts) is a traditional Lithuanian recipe for a classic doughnut made from a flour and curd cheese batter sweetened with sugar, flavoured with lemon zest and vanilla extract that are leavened with baking powder and deep fried to cook. Ingredients:

350g unbleached flour, sifted
500g full-fat curd cheese (if you cannot find full-fat curd cheese add 1 or 2 tbsp of a neutral-tasting oil)
4 eggs
1/2 tsp baking powder
2 tsp freshly-grated lemon zest
1 tsp vanilla extract
1/2 tsp salt
100g sugar
powdered sugar, to decorate
oil for deep frying

Method:

Combine the flour, curd cheese, eggs, (oil if using), lemon zest, vanilla extract, salt and sugar. Mix thoroughly to bring together as a soft dough.

In the meantime, heat oil in a deep fryer to 180°C. When the oil is hot, shape the balls with two tablespoons into balls about 2 to 3 cm in diameter. Drop into the hot oil and fry until golden brown all over, turning half way through. When done, remove with a slotted spoon and drain on kitchen paper as you cook the next batch.

Whilst still warm roll in the icing sugar then allow to cool completely before serving
