Vanille Kranse (Vanilla Rings) is a traditional Danish recipe for a classic biscuit (cookie) made from a flour sugar and butter batter flavoured with vanilla that's piped into a ring before baking. This is another traditional kind of Danish butter cookie (biscuit) that's piped into rings before baking.
Ingredients:
500g plain flour
200g sugar
750g butter, softened
1/2 tsp bicarbonate of soda
1 tsp vanilla extract
Method:
Cream together the butter and sugar in a bowl until pale and fluffy. Work in the vanilla extract then sift over the flour and bicarbonate of soda. Work the flour into the butter until your have a soft dough.
Spoon the mixture into a piping bag fitted with a large star nozzle. Line a baking tray with greaseproof (waxed paper) and pipe the mixture into circles of 5cm in diameter.
Transfer to an oven pre-heated to 190°C and bake for about 8 minutes, or until cooked through and golden brown. Remove from the oven and allow to cool for 10 minutes then carefully transfer the biscuits to a wire rack to cool completely before storing or serving.
