The lamb Valentine steak is a cut that's gaining in popularity. It's a boneless double chop of lamb loin butterfly cut into very attractive and classy looking steaks. This makes an excellent cut of meat for that special Valentine's day dinner.

Ingredients:

2 Valentine lamb steaks
1 garlic cloves, peeled
salt and freshly-ground black pepper, to taste
1 avocado
2 tsp lemon juice
1/2 tsp paprika
150ml thick sour cream

Method:

Rub the Valentine lamb steaks with the peeled garlic then season liberally with salt and freshly-ground black pepper. Either fry in about 2 tbsp oil or grill for about 4 minutes per side (for medium), or until done to your liking.

Meanwhile, prepare the sauce. Peel the ripe avocado then transfer the flesh to a food processor and purée with the lemon juice, the remains of the garlic clove, the paprika and the sour cream. Season the puree with salt and black pepper, to taste.

To serve, transfer the lamb steaks to serving plates, accompany with minted, boiled, new potatoes then accompany with the avocado sauce and garnish with bunches of mustard and cress.
