American-style Breakfast Pancakes is a traditional Canadian recipe for a classic thick breakfast pancake of a flour, sugar, egg and milk batter flavoured with chocolate and leavened with baking powder that is shaped in the form of a heart and which makes an excellent start to Valentine's day or even Shrove Tuesday. Combine the flour, cocoa powder, baking powder and caster sugar in a bowl. Stir well to mix then add the egg yolks and milk. Whisk into the dry ingredients until you have a smooth batter.
Add the egg whites to a clean and dry bowl. Beat the egg whites until soft peaks form when the whisk is lifted away. Now, using a metal spoon, carefully fold the egg whites into the pancake batter.
Heat a large frying pan until hot. Add the butter and continue heating until foaming. Add ladlefuls of the batter to the pan, shape into hearts and cook for 1 to 2 minutes, or until bubbles begin to form on top of the batter. At this point, turn the pancakes over with a spatula and cook for a further minute on the other side.
Remove from the pan with the spatula and place in a low oven to keep warm as you cook the remaining batter.
Typically these are served for breakfast, accompanied by maple syrup.
