The Ultimate Chocolate Cake

Ingredients:

225g self-raising flour
35g cocoa powder
1 tsp bicarbonate of soda
125g plain chocolate, broken into pieces
4 tbsp water
125g light brown sugar
125g caster sugar
150g butter
3 medium eggs, beaten
170ml sour cream

For the Ganache:
200g plain chocolate, broken into pieces
300ml double cream
2 tbsp caster sugar

Method:

Sift together the flour, cocoa powder and bicarbonate of soda into a small bowl.

Combine the chocolate and water in a small heat-proof bowl and set over a pan of barely-simmering water. Stir until the chocolate has melted then take off the heat.

Cream together the sugars and butter until light and fluffy. Gradually add the beaten eggs, with a little of the flour at each addition, beating thoroughly to combine after each addition.

Now mix in the sour cream and the melted chocolate. Divide the resultant batter between two 20cm diameter sandwich tins that have been greased and lined with baking parchment. Transfer to an oven pre-heated to 180°C (Gas Mark 4) and bake for about 40 minutes, or until the cake is firm. Allow to cool in the tins.

For the ganache, combine the chocolate, double cream and caster sugar in a heatproof bowl. Set over a pan of barely-simmering water and cook, stirring, until the chocolate has dissolved. Stir well to mix the ingredients then take off the heat.

Allow to cool slightly and thicken then pour just under half over one of the cake halves. Sit the other cake half on top then decorate the sides and top of the cake with the remaining ganache. Allow the ganache to set before slicing into wedges and serving.
