This is a British recipe for these classic dunking biscuits. They are also popular in India and in Europe and South America where they're more commonly known as Maria biscuits or galletas Maria. The biscuits were first developed by by the London bakery Peek Freans in 1874 to commemorate the marriage of the Grand Duchess Maria Alexandrovna of Russia to the Duke of Edinburgh. They were exported to India and became popular throughout Europe, particularly in Portugal and Spain where, following the Civil War, the biscuit became a symbol of the country's economic recovery after bakeries produced mass quantities to consume a surplus of wheat.[3] Marie biscuits became popular in South Africa after going into production by Bakers Biscuits in 1898. They are also enjoyed throughout South America and the Caribbean. In various territories they are also known as MarĂa, Mariebon and Marietta, amongst other names. The original recipe used vegetable oil, but home-made versions such as this one typically use butter.
Ingredients:
60g Unsalted Butter
60ml Milk
300g Maida (fine plain Flour)
80g Sugar
1/2 tsp Baking Soda
1/2 tsp Vanilla extract
Pinch of salt
Method:
Combine the milk, sugar and baking soda in a saucepan and place over medium heat. Cook until the sugar has melted and the mixture has come to a boil. Take it off the heat and set aside to cool.
Pre-heat your oven to 160C.
Combine the flour, butter and salt in a bowl. Use a fork to rub the butter into the flour. Once everything has mixed and resembles coarse crumbs add the liquid and bring everything together as a dough.
Now take a portion of dough and roll it thinly (the thinner you make them the crispier they will bake).
Cut into biscuits using round or fluted cutter. As you cut them, arrange the biscuits on a baking tray which is lined with parchment paper. When all the dough is prepared, transfer to the centre of your pre-heated oven and bake for 8-10 minutes.
Remove and cool in the baking trays for 10 minutes then transfer to a wire rack to cool completely.
Store in an air-tight tin or jar where they will keep for up to a week.
