Tzatziki

Tzatziki sauce is a Greek herb seasoned, strained yogurt and fresh cucumber based dip or sauce originating from Greece.
Ingredients:
¾ English cucumber, partially peeled (striped)
1 tsp sea salt divided
4-5 garlic cloves, peeled, finely grated or minced
1 tsp white vinegar
1 tbsp Greek Extra-virgin Olive Oil
500ml (2 cups) plain Greek yoghurt
Handful of chopped fresh dill and/or mint
¼ tsp ground white pepper
Warm pita bread for serving
Sliced vegetable batons for serving
Method:
Line a fine-meshed sieve with muslin (cheese cloth), spoon in the yoghurt, set over a bowl, place in your refrigerator and allow to drain over night (this will remove any excess liquid).
Finely grate the cucumber (or finely chop in a food processor). Toss the grated cucumbers with ½ tsp sea salt. Spoon the grated cucumber into a square of muslin (cheese cloth) or a double thickness napkin and squeeze out the excess liquid. (There will be a lot of liquid).
Combine the garlic and the remaining 1/2 tsp salt, white vinegar and olive oil in a large mixing bowl. Add in the grated and squeezed cucumber then stir in the yoghurt along with a pinch of white pepper, and the fresh herbs. Stir to combine well.
Cover with clingfilm (plastic wrap) then transfer to your refrigerator to chill (between 30 minutes and 2 hours before serving). As well as chilling, this helps thicken the sauce and give it the best texture, while allowing all the flavours to meld.
When ready to serve, stir the tzatziki sauce to ensure everything is nicely combined then transfer to chilled serving bowl. Drizzle over a little more extra virgin olive oil. Serve with your favourite raw vegetables and pita bread chips or wedges.
