This represents on of the new-style fusion Anglo–Indian dishes which shows what the best combination of European and Indian cooking can yield. It's simple to make, yet very pretty to look at and extremely tasty!

Ingredients:

1 tbsp cumin seeds
1/2 tsp turmeric
1 kg King Edward potatoes, peeled and quartered
200ml full-fat milk (or buttermilk)
200ml olive oil
1 tsp salt

Method:

Begin by heating the olive oil in a large metal ladle (ensure it has an insulated handle). Add the cumin seeds to this and when they turn nut brown add the turmeric and heat for a further 20 seconds. Pour into a bowl and set aside.

Meanwhile place the potatoes in boiling salted water and cook for about fifteen minutes (until the centres feel soft when pricked with a sharp knife). Drain into a colander and allow to dry for five minutes. At this point return the potatoes to the pot, place on a medium heat and mash. Add the milk and salt and mash in then strain the infused oil through a sieve into the pan and whisk until the potatoes are smooth. Serve immediately.
