Turkish delight or lokum represents a family of confections based on a gel of starch and sugar. Premium varieties consist largely of chopped dates, pistachios, hazelnuts or walnuts bound by the gel; traditional varieties are often flavored with rosewater, mastic gum, bergamot orange, or lemon. The confection is often packaged and eaten in small cubes dusted with icing sugar, copra, or powdered cream of tartar to prevent clinging. The origin of Turkish delight is not precisely known, but the confection is known to have been produced in Turkey and Iran (Persia) as early as the late 18th century. The Turkish word lokum comes from the Arabic al-lukum. In the Arab world, Turkish delights are called رَاحَة الْحُلْقُوم (rāḥat al-ḥulqūm) which means 'throat comfort'.

Ingredients:

2 tbsp cornflour (cornstarch)
230ml water
1/2 tsp Cream of Tartar
1 tsp flavourings (any of: rose water, mastic, strawberry, orange, lemon)
a few drops of food colouring (red, yellow, green or orange depending on the flavouring used)
120g toasted nuts, chopped (almonds or pistachios)

Method:

In a pan, mix the sugar and cornflour together and dissolve in the water. Add the cream of tartar and bring to the boil. Cover and cook for five minutes. Bring off the boil, add the flavouring and colour along with the nuts. Stir together then pour into a shallow pre-oiled pan. (if desired you can divide into two or three batches and add separate flavourings/colourings).

When completely cold cut into squares, roll in icing sugar and store in an air-tight tin.
