Turkey Steaks with Redcurrant Glaze: Classic British recipe for a barbecue dish of turkey breast steaks with a redcurrant, oil, wine and lime juice glaze served with vinaigrette-dressed salad leaves.
Ingredients:
100g
redcurrant jelly
2 tbsp lime juice
4 tbsp olive oil
2 tbsp dry white wine
1/4 tsp ground ginger
pinch of freshly-grated ginger
4 turkey breast steaks
salt and freshly-ground black pepper, to taste
To Serve:
mixed salad leaves
vinaigrette dressing
1 ciabatta loaf
cherry tomatoes
Method:
Combine the redcurrant jelly and lime juice in a small pan. Heat gently, stirring, until the redcurrant jelly melts then stir in the oil, wine, ginger and nutmeg.
Arrange the turkey steaks in a shallow, non-reactive dish and season with salt and black pepper. Pour over the redcurrant mixture, then turn the meat so that it's well coated in the glaze. Cover and set aside to marinate in the refrigerator over night.
When ready to cook, remove the turkey from the marinade (reserve the left-over marinade) and set on the oiled rack of a barbecue over hot coals. Cook for about 4 minutes per side, basing frequently with the reserved marinade.
In the meantime, dress the salad leaves with the vinaigrette dressing and cut the ciabatta loaf in half. Arrange the bread, cut side down, on your barbecue and toast until golden.
Cut each piece of bread into 4. Arrange some of the salad on a piece of bread, sit the turkey on top and top with another piece of bread. Serve immediately, accompanied by the cherry tomatoes.
