Turkey Cakes: A British recipe for a potato cake made with leftover Christmas or Thanksgiving turkey bound with egg and flavoured with spices and parsley.

Ingredients:

400g mashed potatoes
500g left-over cooked turkey, shredded
3 garlic cloves, minced
1 egg, beaten
1 tbsp fresh flat-leaf parsley, chopped
1 tsp ground turmeric
1/4 tsp cayenne pepper
4 tbsp plain flour (or more, as needed)
oil for frying

Method:

Combine all the ingredients in a bowl and mix until thoroughly combined. If the mixture is a little wet, add enough flour so that it's no longer sticky.

Shape the mixture into patties and fry in oil for between 3 and 5 minutes per side, or until cooked through and golden brown on the outside.

Serve hot.
