Triopita (Cheese Pie) is a traditional Greek recipe for a filo pastry based pie of Feta cheese. The full recipe is presented here and I hope you enjoy this classic Greek version of Triopita.

This is a classic Greek pastry dish that can be served either warm or cold.
Ingredients:
6 tbsp butter
8 tbsp plain flour
500ml milk
1 tsp salt
pinch of freshly-grated nutmeg
450g Feta cheese
230g grated Parmesan cheese
4 eggs
handful of chopped parsley
300g Filo pastry
150g molten butter
Method:
Melt the 6 tbsp butter over low heat, add the flour and whisk into a smooth paste. Gradually add the milk, stirring continuously with a wire whisk. Season with salt and nutmeg then simmer for five minutes, stirring occasionally, to cook the flour. Mash the feta cheese with a fork and combine with the grated Parmesan, parsley and beaten eggs in a bowl. Spoon this mixture into the milk and whisk in.
Melt the remaining butter then take a 22cm x 32cm baking pan, brush the sides with butter and line with half the pastry sheets brushing each with butter and ensuring they cover the entire pan and come up the sides. Pour the cheese filling into this and use the remaining pastry sheets to cover the top. Brush the top with butter and score the sheets into strips about 8cm wide in both directions. Place in an oven pre-heated to 170°C (150°C/325°/Gas Mark 3) and bake for about 45 minutes until the pastry is a golden brown.
