Treacle Toffee

Treacle Toffee: A classic British recipe for a sweet (candy) made of treacle and dark sugar, broken into pieces and piled.

Ingredients:

450g demerara sugar
75g butter
1/4 tsp cream of tartar
100g black treacle (molasses)
100g golden syrup

Method:

Add the sugar to a pan along with 150ml water. Heat gently until the sugar dissolves then add all the remaining ingredients and bring to a boil. Continue boiling until the temperature, as measured by a confectioner's thermometer reaches 132°C (the soft crack stage).

Pour the toffee into a well greased 18cm square tin. Allow to cool for a few minutes then mark into squares with an oiled knife. When completely set cut the toffee into squares, wrap in waxed papers and store in an air-tight container.
