This is the Surinamese shrimp sauce that is a key ingredient in many Surinamese dishes, particularly stir fries or 'nasis'.

Ingredients:

8 tbsp shrimp paste (trassi)
2 tsp brown sugar
1 tsp chilli powder
1 tsp ground allspice
2 tsp garlic powder
2 tsp onion powder
1/2 tsp salt
2 tsp smoked paprika
2 bouillon cubes

Method:

Add the shrimp paste to a bowl and mash with a fork to soften. Add all the remaining ingredients and blend with the shrimp paste until thoroughly combined.

You are looking for a thick, just spoonable paste. If the mixture is too thick add a little water to slacken.

Transfer to a clean jar and store in the refrigerator.
