Traditional Roast Rabbit: Classic British recipe for a dish of rabbit wrapped in bacon that's oven roasted until cooked though and nicely browned, shown garnished with lemon slices and pickled red bell peppers.
Ingredients:
1 whole, oven-ready farmed rabbit
10 slices of streaky bacon
salt and freshly-ground
black pepper, to taste
4 sprigs of thyme
2 garlic cloves
olive oil
Method:
This dish is best made with farmed rabbit as the meat is guaranteed to be tender. Wash and dry the rabbit, rub all over with the olive oil then season well both inside and out. Place the thyme and halved garlic cloves in the body cavity then wrap all over with the bacon.
Place in a roasting dish then transfer to an oven pre-heated to 220°C and roast for 20 minutes then reduce the temperature to 180°C and roast for a further 30 to 40 minutes.
Remove from the oven, take off the bacon and serve with mashed potatoes, vegetables and gravy.
