Tourchi Batata (Potato Salad with Cumin) is a traditional Tunisian recipe for a classic dish of diced potatoes served in a dressing of olive oil, lemon juice, cumin and harissa that can be served as an accompaniment or a starter. Ingredients:
450g potatoes, washed
2 tbsp olive oil
1 tsp harissa
1/2 tsp salt
1 tsp ground cumin
juice of 1 lemon
Method:
Bring a pan of lightly-salted water to a boil. Add the potatoes and cook for about 20 minutes, or until just tender. Drain then set aside to cool. Once cold enough to handle, peel the potatoes then cut into small dice.
Heat the oil in a pan and use to fry the harissa, salt and cumin for 1 minute. Add the lemon juice and bring to a boil. Immediately take off the heat and pour over the diced potatoes. Toss to combine and serve.
