Tonkatsu Sauce is a traditional Japanese recipe for a mushroom and tomato-based sauce that, typically, is served as a dipping sauce for fried pork but also works well with tempura, firm-fleshed fish and mushrooms. This is a rather wonderful Japanese sauce that's intended for pork (as in Tonkatsu pork but also works with firm fish and even mushrooms.
Simply place all the ingredients into a saucepan and bring to the boil over medium heat. Reduce to a simmer and stirring occasionally cook for about half an hour, skimming-off any foam that rises to the surface. Allow to cool and use immediately. Alternatively, the sauce will keep for up to a month if refrigerated.
